Skinny Waffles

Skinny Waffles
This is another great recipe for our gluten-free friends. These are substantial and filling waffles with wonderful heart- and waistline-healthy ingredients.

Makes about 8

1 cup buckwheat flour
1 cup unbleached white flour or rice flour
3 tablespoons flax seeds (ground)
1 1/2 teaspoons ground cinnamon
3/4 teaspoon baking soda
1 cup soy milk, rice milk, or buttermilk
1 cup yogurt (plain or vanilla)
1 tablespoon vegetable oil
3 eggs

Preheat waffle iron and coat with nonstick cooking spray.

Whisk together dry ingredients (flour through baking soda) in large bowl.
In medium bowl, whisk milk, yogurt, oil and eggs. Combine wet and dry ingredients until just mixed. If batter appears too thick, slowly add more milk.

Ladle or spoon about 2/3 cup batter into waffle iron, close lid and cook until golden.
